Potatoes with sweet bell pepper and garlic stuffing

Ingredients: |
6 Big potatoes
2 roasted red bell peppers.
1 roasted green bell pepper.
2 roasted garlic gloves.
1 tablespoon CORIANDER DRESSING.
2 tablespoons grated mozarella cheese .

Preparation: |
Cook the potatoes with skin, cut the top part and scoop out most of the pulp with a spoon leaving about one centimeter of pulp attached to the skinl. Save the pulp. Roast the bell peppers, peel and slice them thinly. Roast the shelled garlic and remove the two cloves. Mix the potato pulp, garlic and dressing, then the sweet bell peppers. Stuff the potatoes and sprinkle with mozarella cheese .
Bake at 370° until the cheese melts.
