Ingredients: |
4 chicken breast scallops
1 garlic clove crushed
1 tablespoon soy sauce
2 tablespoon Worcestershire sauce
1 teaspoon mustard
4 cups of mixed lettuces such as romaine, red leaf, radicchio, bibb, Belgian
endive and curly endive
1 cup large - dice mango
1 cup large – dice ripe avocado
¼ cup large – dice sweet onion
1 cup Villy Cape gooseberry Dressing

Preparation: |
Season the chicken breasts with salt and pepper. Add garlic clove, soy sauce, Worcestershire sauce and mustard and let marinate for 3 hours. Roast for 3 minutes on each side.
Put the lettuces in a large bowl and amply coat with Villy Cape Gooseberry Dressing. Add the mango, onion, and avocado. Toss together. Serve on individual plates with the scallops arranged attractively on top of the greens.
