Tamarind Prawns and Orange Rice

Tamarind Dressing

Ingredients: |
500gr uncooked prawns
8 tablespoons Villy Tamarind Dressing
1 garlic clove crushed
1 tablespoon oil
1 tablespoon toasted sesame seed
Orange Rice
1 cup rice
2 cups water
1 teaspoon lime juice
½ teaspoon salt
1 teaspoon grated orange peel
1 tablespoon butter

Preparation: |
Shell prawns leaving tail intact. Cut along centre of prawns, remove vein and flatten prawn slightly. Heat oil in a medium pan, add prawns and garlic stir fry for 2 minutes. Add Villy Tamarind Dressing and stir fry until prawns are tender. Serve prawns over orange rice sprinkled with sesame seeds.
Orange Rice
Rinse rice under cold water, drain. Add rice to medium pan with 2 cups boiling water with lime juice. Boil uncovered for about 10 minutes or until water is absorbed. Reduce heat and flip over the rice. Simmer gently covered with a tight fitting lid until tender. Just before serving stir orange peel and butter.
