Ingredients: |
1 cup tamarind juice
1 tablespoon ginger. finely chopped
3 tablespoons soy sauce
6 tablespoons GARLIC JAM
3 tablespoons CORIANDER DRESSING
1 1/2 pound of ground tuna patties
Salt and pepper, dash

Preparation: |
Combine tamarind juice, ginger, soy sauce and garlic jam in a saucepan and boil. Lower heat and reduce reduce sauce to half its volume, approximately 30 minutes; remove from heat and add CORIANDER DRESSING.
To prepare patties: salt and pepper tuna and make patties. Place in the refrigerator for 30 minutes (pattis retain their shape when cooked if they are very cold). Glaze patties with the tamarind sauce. Cook over medium heat, about 8 minutes. Brush patties with sauce frequently while cooking. Serve with a good salad.
